Slow Cooker Mac and Cheese and Crabby Mac Recipes

Welcome to the new season of GrateTV.  The days are getting longer and the weather is warming here in Birthplace of American Barbecue, Coastal South Carolina.  We are lucky, we can usually grill year round, but this year a flurry of ice and snow has slowed the season a little.  March is here and GrateTV is doing a classic twist on March Madness.  We are celebrating classic BBQ side dishes and grilled starters with STARCH MADNESS!

To start the season we give tribute to the “Mac Daddy” of all the delicious sides, Macaroni and Cheese. According to the American Cheese Society Macaroni and cheese has remained on America’s top ten comfort foods for decades.  In any given 12 week period, approximately one third of the American population will eat macaroni and cheese at least once.  It’s the most searched food recipe on Food Network and ranks at the top of Google as well.  For these reasons we consider Macaroni and Cheese the King of all starches and give homage to it by creating an epic GrateTV Mac Off!

Slow Cooker Mac and Cheese

Slow Cooker Mac and Cheese

Ingredients

  • 12 oz can evaporated milk
  • 1 and a half cups milk
  • 1/2 stick of butter
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp. dry mustard
  • 8oz. elbow macaroini
  • 3 cups grated cheddar cheese
  • 1 cup grated monterey jack cheese
  • 1/3 cup grated parmesan cheese

Instructions

  1. Start by using a non stick spray on the interior of your slow cooker. It will minimize the sticking as your mac and cheese set at the end of cooking.
  2. In a bowl mix/beat/whisk eggs and then add both evaporated and regular milk. Mix in all the dry spices in to the mix mixture bowl.
  3. Dump UNCOOKED dry macaroni noodles into the slow cooker (Crock Pot) and pour milk mixture on top. Stir completely and then add all of the cheeses. Mix again until fully coated.
  4. Cover Crock Pot and and slow cook on low setting for 5 hours. Stir one time after approximately two hours and try to resist opening the lid until done. Stealth peek in at the end if you don't have a transparent lid.
  5. This recipe triples nicely in a large slow cooker.

GrateTV Crabby Mac

GrateTV Crabby Mac

Ingredients

  • 1 lb. cooked crab meat
  • 1 lb. pasta (any type)
  • 2 cups light cream
  • 8 Tbsp. butter divided
  • 4 Tbsp. flour
  • 16 oz. mascarpone cheese
  • ¼ cup sharp cheddar cheese
  • 2 shallots - minced
  • 1 clove garlic - minced
  • 1/2 cup panko bread crumbs
  • 1 Tbsp. olive oil
  • 1 Tbsp. fresh parsley - chopped (or 1 tsp. dried)
  • 1 Tbsp. fresh chives - chopped (or 1 tsp. dried)
  • 1 tsp. lemon zest
  • 2 Tbsp. parmesan cheese
  • 1 1/2 tsp. salt
  • 1 1/2 tsp. white pepper

Instructions

    Crunchy Topping:
  1. In a saucepan, melt 2 Tbsp. butter.
  2. Add the minced garlic and sauté for 1-2 minutes.
  3. Add the panko bread crumbs, parsley, chives, olive oil, lemon zest, 1/2 tsp. salt and 1/2 tsp. white pepper.
  4. Mix together to blend.
  5. Add the parmesan cheese. Set aside.
  6. Pasta:
  7. In another pot, cook the pasta in boiling water. While the pasta is cooking, make the cheese sauce.
  8. Cheese Sauce:
  9. Over medium heat, Melt 4 Tbsp. butter in a large saucepan.
  10. Add 4 Tbsp. flour, 1 Tbsp. at a time, to the butter.
  11. Whisk the flour into the butter to blend.
  12. Slowly add the cream and whisk into the butter and flour mixture to create a white sauce.
  13. Continue heating until it thickens. Add the mascarpone and cheddar cheeses to the white sauce and mix to blend.
  14. Add the 1 tsp. salt and 1 tsp. white pepper.
  15. Set aside
  16. For the Crab
  17. Melt 2 Tbsp. butter in a sauce pan.
  18. Add the minced shallot and sauté for 1-2 minutes.
  19. Add the crab meat and toss to cover and heat - about 1-2 minutes. Do not overcook - this is just to lightly heat the crab meat.
  20. Add this mixture to the cheese sauce and mix together.
  21. Drain the pasta.
  22. Spoon the pasta into the large saucepan of cheese and crab.
  23. Mix well. Spoon portions into pasta bowls and top with the seasoned panko crumbs.
  24. Serve immediately.
