I am from the Southern New Jersey and an avid fisherman. Can you give share some info on smoking or grilling fish. I live at the shore and would like to smoke fish that I have caught. Mainly Striper (Striped Bass), Tuna and Drum.

I frequently use boneless pork shoulders from my local butcher in lieu of the standard "long cut." The bone-in version takes a lot longer to cook and provides a good bit of "pork soup." The boneless seems to provide a better yield, but I have to be very careful not to over cook it and get dry Q.
Should I brine the boneless shoulders or pull them early...
