A Loaded Potato Salad That Will Knock Your Socks Off! – Recipe

loaded potato salad recipeThe King of Starch is featured again this week as Starch Madness continues on the Grate.  Potato Salad is just good food.  It is usually served with barbecue, hot dogs, hamburgers or cold sandwiches.  Tons of people would lay claim on having made the best potato salad and would offer the most authentic way of making it. But no matter what anyone says, the best potato salad, is purely a personal preference. Some like their potato salads oozing with dressing, some would prefer theirs to be really soft and tender, and others would want their potato salad to be crispy and crunchy.  Whatever your appeal, homemade potato salad is Grate Food.

Here is the recipe for GrateTV Loaded Potato Salad.

GrateTV Loaded Potato Salad

Prep Time: 15 minutes

Cook Time: 30 minutes

GrateTV Loaded Potato Salad

  • 5 pounds Yukon gold Potatoes – Peeled
  • 1 package of bacon, cooked and crumbled
  • 4 Hard-Boiled Egg – Grated
  • 2 Green Onions – Sliced
  • 2 stalk celery diced
  • 1 1/2 cup shredded cheddar cheese
  • Dressing:
  • Ranch dressing mix
  • 1 cup sour cream
  • ½ cup mayonnaise
  • ½ cup milk

  1. Wash and cut the potatoes into bite-sized pieces. Cover with water and boil until fork tender, about 20-25 minutes. Do not overcook!
  2. Drain and cool the potatoes. I put them in a separate bowl and once they cooled enough I put them in the fridge to cool all the way. This gives them an excellent texture and prevented the dairy ingredients from getting hot or the cheese from melting. If you are serving this salad hot then you don’t need to cool the potatoes, just skip step 2! Once the potatoes are completely cool peel and cut them into bite sized pieces.
  3. Hard boil 4 – 6 eggs. Cool and peel
  4. Mix the mayo and sour cream together in a bowl. Add the Ranch Dressing mix.
  5. Add to the potatoes
  6. Grate the eggs and add them to the bowl.
  7. Then add the green onions, celery, and cheese. Salt and pepper to taste.
  8. Top with extra shredded cheese and bacon and serve!
